This versatile soup can be a nutritious humble meal served with rice. It can also be one of the several dishes for a more extravagant meal. AND that is why Dal is my GO TO. Not only that, this specific incredibly delicious Dal recipe takes me back to those care free days. It’s like a warm hug!
I remember coming home from school dying to nestle in my bed and SLEEP. I was also, always looking forward to this quick bowl of comfort just as much. The aroma of freshly boiled rice, the cumin tempering in oil rising through my mom’s kitchen. It’s still irresistible to me. Sometimes my mom would serve with Shami Kababs or crispy fried fish but its so good on its own that
No Shaami Kabab needed!
Best of all my toddler has loved Daal ever since she was a baby. I don’t have to compromise on how spicy or tangy I make it either. All I do is ladle a cup or two for her in a separate bowl. Dilute it with chicken broth and simmer for 10 minutes. And Viola! She LOVES it, and I am a happy mother.
Why do I call it the best Dal in the Instant Pot
Before life got busy, I always slow cooked this Dal on a stovetop. After I became a mom, I lost the privilege of planning dinners and lunches ahead of time. But then I made the best decision ever to buy an Instant Pot. Then I made an even better decision made this Dal in it. Let me tell you, I couldn’t think of anything that I was missing. It tasted just as delicious, the consistency was amazing and I never went back to making it on a stovetop.
Now if you talk about cooking this for hours in a clay pot over wood burning fire. Esoecially in an outdoor kitchen somewhere in a village of Pakistan. Well that would be a dream. Wouldn’t it? This recipe won’t take you there but will certainly get you close.
