This super quick and easy Hara masala Chicken is so simple and delicious. It is cooked in the most delicious and a very popular base for Pakistani curries. Its one of my favorites!

Cilantro, green chilies, garlic, freshly ground peppercorns, a little bit of lemon juice and salt are all blended together to create this delicious base. Hara Masala Chicken is so flavorful and delicious that I will also use this base for scrambled eggs at times and I just LOVE the burst of flavor it gives to any dish.

The above description is for a super traditional Hara masala but I enjoy changing things up a little bit. I add a bit of yogurt into the hara masala mixture just before blending and will also substitute some of the lemon juice with white vinegar.

My little twist

Also, theres a few things that I have adopted when making this dish. First one, is the way I slice the chicken. This is super important to me because it makes a huge difference in the texture of this dish, especially if you’ll be adding baked potato wedges like I did. Adding baked potatoes is a twist that I genuinely enjoy in this dish. My mom adds boiled potatoes and will also fry the potatoes at times. Adding boiled potatoes make this recipe a perfect comfort meal especially on top of a bowl of steamed rice. But both ways are equally amazing to me.

Another thing I do is add a little bit of cream to this dish right at the end to make it a little more creamy and rich. This also helps lighten up the spice level, and makes it perfect to enjoy this hara masala chicken and potatoes on its own in a bowl using a fork.

The process for this quick and easy Hara Masala chicken.

I start by cutting the chicken horizontally so there is two thin chicken breasts. Then I will cut the chicken breast lengthwise in tenders and then slice the chicken against the grain in bite size pieces. Once the chicken is cut , I blend together the hara masala and then pour it over the chicken and set it aside to marinate.

While I wait for the chicken to marinate, I cut up the potatoes into thin wedges and then cut the length of the wedges in half so chicken and potatoes are proportionate in size. Then I’ll line a baking sheet with a parchment paper , spread out the wedges evenly on the tray. Add olive oil, salt, pepper and some garlic powder. Bake them until crispy.

After I put the potatoes in the oven, the cooking process of the chicken begins. Marinating for hours is not necessary. I usually will marinate this chicken for 20 to 25 minutes.

Now, I chop an onion and add to a wok with oil. Once the oil is golden brown, I will add the chicken with all the marinade and cook until the sauce changes colors from a bright green to a dark green color. Once cooked thoroughly , the baked crispy potatoes are folded in with the chicken. Then, I pour in a little bit of heavy cream, which is another one of my twists for this dish. This gives the sauce a bit of richness and enables you to enjoy this meal on its own too.

A quicker version of the Hara Masala Chicken

This Hara Masala Chicken is so easy to make, and just delicious. This is one of those dishes that is a repeat in my household. To make it even easier, I’ll make it with boiled potatoes, to make it more comforting and both my daughter and husband just love it.

All you need to do is, add rinsed and soaked cubed potatoes at the same time you add the chicken to the wok, and simmer until cooked through.

Hara Masala Chicken

A simple chicken and potatoes recipe cooked in a cilantro and green chili sauce. Hara Masala in english basically is green curry chicken. This can be served as a comfort meal with a bowl of rice or follow the twist in this recipe and eat it on its own using a fork. Its super easy and delicious.

Ingredients
  

  • 2 lbs Chicken breast sliced in bite size pieces
  • ¼ cup Neutral oil
  • 1 Onion chopped
  • ¼ cup Heavy Whipping Cream (optional)

Baked Potato Wedges

  • 3 medium Potatoes cut in thin wedges
  • 2 tbsp Olive oil
  • ½ tsp Garlic powder
  • ½ tsp Salt
  • ½ tsp Pepper

Hara Masala Marination

  • ¾ bunch Cilantro
  • 4-5 large Mint leaves (optional)
  • 3-4 Serrano peppers
  • 4-5 cloves Garlic
  • 2 tbsp Lemon juice
  • 1 tbsp White vinegar
  • ½ cup Yogurt
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions
 

  • Preheat oven to 350 for potato wedges.
  • Start by blending all ingredients of Hara Masala marination. Blend until mixture reaches a smooth consistency.
  • In a medium bowl, pour marination over chicken and marinate for 20-25 minutes.
  • Meanwhile, spread potato wedges on a baking sheet, and drizzle oil, salt, garlic powder, pepper and toss.
  • Bake for 20 to 25 until crispy.
  • In a wok, add oil and chopped onion and saute until golden brown.
  • Now add the marinated chicken and cook until sauce changes color from a bright green to dark muddled green.
  • Add baked , crispy potato wedges and gently, fold into the sauce with the chicken.
  • Pour in the cream if using for a rich consistency.
  • Enjoy!
